The Damascene Cuisine
The art of cooking, is like other visual arts such as drawing, music, carving and decoration. It is closely linked to the human civilization to become a form the population’s development .
Kitchens of the Levant make the most famous foods that attract many to it. Appetizers, pasta and desserts are unique to the Syrian cuisine. The traditional Syrian dishes are many and diverse, and are famous for dishes that are simply and quickly prepared and easily digested. They are also is rich in nutrients needed to build the body.
The most popular cuisines became associated with the governorates and cities in Syria. The names are synonymous with name of every city. like the Damascene Fatah .
Fatah is a dish that is made generally for Syrian bread that is toasted dried, then the gravy that it made from meet or chickpeas is added, after that the Arabian Butter or olive oil is added to it, finally it is decorated with nuts such as pine seeds, Shami-nuts and pistachios.
there is also the mkdos mkadm(made from sheep legs) and Arab Fatah  with  Arabian butter or olive oil.
Some of the  well known popular dishes that are served in weddings and memorial ceremonies, and that are also served at the breakfast table during the holy month of Ramadan are the Uzy. 
The Uzy is prepared from rice loaded with lamb chops, peas, nuts, and Arab ghee; it is baked in sheets of doughin the form a ball and it is decorated with almonds or pistachios.
There are many Damascene dishes such as Al-shakria (meat, rice and yogurt) and the stuffed-sheikh (Small summer squash stuffed with meat) Haraq Isba’ao (a spicy dish) stuffed vegetables, tabbouleh and fattoush (salads ) and grape leaves with stake, sheep head, Al-magdrh (grain and lentil) and coked apricot, pumpkin and grains
